Chances are that at some point you have hired a Realtor.  I have been fortunate enough to get the really good ones with a lot of perks, like Recipe Postcards sent out each Holiday!!!  Thank you to B4 Realty in Dallas, Texas for sending me the above pictured Pumpkin Spice Cake Recipe Postcard which I have made to look exactly like the picture without a great deal of effort.  You are making a cake here, so some work is involved but to have something this beautiful in your home is well worth the efforts…..

Great Cake for Any Time...

Ingredients:

For the CAKE, you will need:

3  Cups         all-purpose Flour

3 1/2  tsp      Baking Powder

2  tsp              Pumpkin Pie Spice

1  tsp              Baking Soda

3/4  tsp         Ground Nutmeg

1/2  tsp         Salt

1 1/2  Cups  Sugar

3/4  Cup        Butter, softened

3                      Eggs

1 1/2  Cups  Pumpkin

1/2  Cup        Evaporated Milk

1/4  Cup        Water

1 1/2  tsp      Vanilla Extract

For the FROSTING, you will need:

11  Ounces   Cream Cheese, softened

1/3  Cup        Butter, softened

3 1/2  Cups   Powdered Sugar, sifted

2 1/2  tsp       Maple Flavoring

Instructions:

Preheat oven to 325 degrees (F).  Grease and Flour two 9″ round pans.

Combine Flour, Baking Powder, Spices, Soda and Salt in a small bowl.  Set aside.

In a large mixer bowl, beat Sugar and Butter until creamy.  Add Eggs and beat for 2 minutes.  Add Pumpkin, Evaporated Milk, Water and Vanilla.  Gradually beat in Flour Mixture

Spread evenly in to prepared cake pans and BAKE for 35 to 40 minutes.

Cool, in pans, on wire racks for 15 minutes.  Remove to wire racks and cool completely.

Gather the Ingredients for the Frosting:  Beat Cream Cheese, Butter, Powdered Sugar and Maple Flavoring in a large mixer bowl until fluffy.

Cut each cooled cake in half horizontally with a long, serrated knife.  Frost between layers and on top of cake, leaving the sides unfrosted.  Garnish with nuts, if desired.

Frost Completely if Desired

The cake tastes great with hot coffee or espresso.  As you can see, there are so many variations to assembling the cake and frosting.  Casual or Formal, this cake will impress.   Pumpkin Spice Cake from JW8. . .
